BBQ Quiche

A smoky quiche loaded with assorted smoked meats and Swiss cheese in a flaky pie crust -- a Meat Mitch cookbook favorite.

Ingredients

  • 1 cup whole milk
  • 1 cup heavy whipping cream
  • 1 tablespoon kosher salt, for scalding the milk mixture
  • 3 eggs
  • 2 cups shredded Swiss cheese ⚠️ (source listed an apparent misprint of "24 cup"; corrected to 2 cups)
  • 1 teaspoon kosher salt
  • Pinch of freshly ground black pepper
  • 1 cup assorted chopped smoked meats (previously seasoned with Whomp! Seasoning and Whomp! Sauce)
  • 1 deep dish frozen pie crust (Mitch's pick: the Pillsbury one)

Instructions

  1. Combine the milk, cream, and 1 tablespoon salt in a large saucepan and heat over medium heat until scalded (a skin begins to form on the surface). Remove from the heat and let cool slightly, 10 to 15 minutes. Preheat the oven to 350°F.
  2. Scatter the cheese and smoked meats evenly over the bottom of the pie crust.
  3. In a blender, mix the milk mixture, eggs, 1 teaspoon kosher salt, and pepper at full speed until frothy, about 1 minute.
  4. Pour the mixture over the cheese and meats in the pie shell and carefully place in the oven.
  5. Bake about 45 minutes, or until slightly brown on top and the custard is just set in the middle. Let rest in the pan until just warm, about 15 minutes longer. Cut into sixths and serve immediately.
  6. Tip: smoked bacon is a fine substitute for the smoked meats (use about ½ cup), with sautéed or smoked mushrooms or ½ cup chopped, drained cooked spinach as an addition. This quiche can also be cooled completely, wrapped, and rewarmed or enjoyed at room temperature with your favorite hot sauce. Serves 6.
