  1. Boil the quail eggs: bring a small pot of water to a boil. Carefully lower in the quail eggs and cook about 4 minutes for hard-boiled eggs. Immediately transfer to an ice bath and let cool completely.
  2. Peel the eggs: gently crack and peel each quail egg, taking care to keep the whites intact given their small size.
  3. Make the filling: slice each egg in half lengthwise and remove the yolks. Place the yolks in a small bowl with the Duke's mayonnaise, crème fraîche, chopped cornichons, Yellow Brick Road Mustard Sauce, candied jalapeños, and a pinch of salt. Mash and mix until creamy and well combined.
  4. Fill the eggs: spoon or pipe the filling back into each quail egg white.
  5. Finish: lightly sprinkle the tops with paprika. Serve chilled or at room temperature.
