Ingredients

  • 1½ lbs fresh green beans, trimmed and halved
  • 2 tbsp unsalted butter
  • 1 small yellow onion, finely diced
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup Meat Mitch White Sauce
  • ½ cup heavy cream
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 cup crispy fried onions, plus more for topping
  • Optional: pinch of nutmeg for classic holiday flavor

Instructions

  1. Blanch the green beans: bring a large pot of salted water to a boil. Add the green beans and cook 4–5 minutes until bright green and slightly tender. Drain and shock in ice water; set aside.
  2. Make the mushroom base: in a large skillet, melt the butter over medium heat. Add the onion and sauté 3–4 minutes. Add the mushrooms and cook until browned, 5–6 minutes. Add the garlic and cook 1 minute more.
  3. Create the creamy sauce: stir in the chicken broth, White Sauce, and heavy cream. Season with salt and pepper. Simmer 3–4 minutes until slightly thickened.
  4. Combine: fold in the blanched green beans and 1 cup crispy fried onions. Toss to coat evenly.
  5. Bake: transfer the mixture to a greased baking dish. Top generously with more crispy fried onions. Bake at 375°F for 15–20 minutes until golden and bubbling.
