Smoked and grill-charred racks of lamb, seasoned simply with salt and pepper, served with a warmed Meat Mitch Miso Naughty Japanese Whomp Sauce.

Ingredients

Instructions

  1. Set the smoker to 225°F and get a good smoke rolling.
  2. In a small bowl, mix the salt and pepper. Coat the lamb with the salt and pepper mixture.
  3. Place the lamb racks in the smoker, insert a digital probe thermometer, and cook until the internal temperature reaches 125°F, about 1 hour. Remove from the smoker and set aside.
  4. Lower your grates directly over the fire, or crank a charcoal or gas grill as hot as it will go. Grill the lamb on all sides until nicely charred, about 1 minute per side. Remove and let rest while you make the sauce.
  5. Warm Meat Mitch Miso Naughty Japanese Whomp Sauce in a pan until thinned and smooth. Stir in sliced green onions.
  6. Carve the lamb racks into chops and serve with the Miso Naughty sauce. Serves 4 as a main dish.
